Rules
This is general information, not legal advice. Rules depend on where your business is.

In the US, the Credit CARD Act of 2009 (Regulation E, 12 CFR 1005.20) says a gift certificate cannot expire sooner than 5 years after it was sold, and it limits fees for not using it. Several states go further and ban expiry dates altogether.
The simplest way to stay safe is to leave the expiry date off. That is why this tool starts with no date, and warns you if you set one less than 5 years away. Outside the US, check your country's consumer rules before printing a date.

Most problems with gift certificates come from these, and all of them are easy to avoid.
In the US, federal rules do not let a gift certificate expire sooner than 5 years after it is sold, and some states ban expiry dates entirely. When in doubt, leave the date off.
Check before you set a dateIf all of your printed certificates share one code, you cannot tell which one was used or spot a copy. Number each printed copy.
One code per certificateThe recipient may not know your business. Put your website, phone number or address on the certificate.
Say how to use itA paragraph of fine print in tiny type looks defensive. Keep the terms to one short line.
One line of termsA certificate in random colors looks homemade. Add your logo and pick an accent color that matches your shop.
